Ingredients

  • For the Barbacoa Meat:
  • 3 lbs beef chuck roast or lamb shoulder/goat meat
  • 4 dried guajillo chilies stemmed and seeded
  • 2 dried ancho chilies stemmed and seeded
  • 4 cloves garlic minced
  • 1 medium white onion quartered
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef broth or water
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp ground cloves
  • 1/2 tsp black pepper
  • 1 tsp salt adjust to taste
  • 2 bay leaves
  • 1 tbsp lime juice

Equipment

  • Slow cooker, Dutch oven, or pressure cooker (Instant Pot works great)
  • Blender or food processor (for chili sauce)
  • Cutting board and chef’s knife
  • Measuring cups and spoons
  • Tongs and wooden spoon
  • Mixing bowls
  • Aluminum foil (optional for slow roasting)

Method

  1. Step 1: Prepare the Chilies
  2. Toast guajillo and ancho chilies lightly in a dry skillet for 1–2 minutes to release their aroma.
  3. Soak the toasted chilies in hot water for 15 minutes until softened.
  4. Drain and transfer to a blender with garlic, onion, apple cider vinegar, cumin, oregano, smoked paprika, cloves, black pepper, and a pinch of salt. Blend into a smooth paste.
  5. Step 2: Prep the Meat
  6. Trim excess fat from the beef chuck roast, then cut into large chunks for even cooking.
  7. Rub the chili paste all over the meat, ensuring each piece is coated thoroughly.
  8. Step 3: Slow Cook the Barbacoa
  9. Place meat in your slow cooker or Dutch oven. Add beef broth and bay leaves.
  10. Cook on low for 8–10 hours, or until meat is tender and shreds easily with a fork.
  11. If using an Instant Pot, cook under high pressure for 60–70 minutes, then allow natural release.
  12. Step 4: Shred and Finish
  13. Remove meat from the cooker and shred with two forks.
  14. Mix in lime juice and taste for seasoning. Adjust salt or add more chili paste for heat if desired.
  15. Step 5: Serve and Enjoy
  16. Serve hot in tacos, burritos, or bowls. Garnish with cilantro, diced onions, avocado, or a squeeze of lime.

Notes

Avoid Dry Meat: Low-and-slow cooking is key; high heat will dry out your barbacoa.
Chili Paste: Blend chilies with a little broth to get a smooth, evenly spiced sauce.
Layer Flavors: Marinate meat overnight for a richer, deeper taste.
