Ingredients

  • 1 pound fresh carrots, scrubbed and ends trimmed
  • 1 tablespoon fresh lemon juice, strained
  • 1/2 teaspoon finely grated fresh ginger, optional
  • 1 bottle (750ml) dry sparkling wine or Champagne, chilled
  • 4 sprigs of fresh mint, for garnish

Equipment

  • Centrifugal or masticating juicer
  • Fine-mesh strainer or cheesecloth
  • Small mixing bowl
  • Measuring spoons
  • Champagne flutes
  • Vegetable peeler

Method

  1. Pass the scrubbed carrots through your juicer according to the manufacturer's instructions.
  2. Pour the resulting juice through a fine-mesh strainer or cheesecloth into a clean bowl to remove any lingering pulp or foam.
  3. Stir the fresh lemon juice and the grated ginger into the carrot liquid, ensuring the ginger is well-distributed for a subtle heat.
  4. Place the bowl in the refrigerator for at least 10 minutes to ensure the juice is thoroughly chilled.
  5. Pour 2 ounces of the prepared carrot mixture into each of the four chilled champagne flutes.
  6. Slowly top each glass with approximately 4 ounces of cold sparkling wine, pouring at an angle to preserve the carbonation.
  7. Stir very gently with a long cocktail spoon once to combine the ingredients without losing the bubbles.
  8. Garnish each glass with a fresh mint sprig and serve immediately while cold.
