Ingredients

  • 8 ounces (225g) high-quality semi-sweet chocolate, finely chopped
  • 1/2 cup (120ml) heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 1 pinch of fine sea salt
  • Assorted dippers: strawberries, banana slices, marshmallows, pretzels, and pound cake cubes

Equipment

  • Heavy-bottomed saucepan
  • Rubber spatula
  • Whisk
  • Fondue pot or a small ceramic bowl set over a tea light candle
  • Long-handled fondue forks or bamboo skewers

Method

  1. Place the finely chopped chocolate into a heat-proof glass or metal bowl.
  2. Pour the heavy cream into a small saucepan and heat over medium-low heat until it just begins to simmer, showing small bubbles around the edges. Do not let it reach a full, rolling boil.
  3. Remove the cream from the heat immediately and pour it directly over the chopped chocolate.
  4. Let the mixture sit undisturbed for 2 minutes to allow the heat to penetrate the chocolate pieces.
  5. Using a rubber spatula or whisk, stir the mixture in slow, circular motions starting from the center and working outward until the chocolate is completely melted and the ganache is glossy and smooth.
  6. Stir in the vanilla extract and the pinch of sea salt until fully incorporated.
  7. Transfer the mixture to a fondue pot or a warm ceramic serving bowl.
  8. Arrange your selection of dippers on a platter and serve immediately while the mixture is warm and fluid.
