Method
- Step 1: Prepare the Crab Filling
- In a large bowl, gently mix the lump crab meat with mayonnaise, egg, breadcrumbs, Dijon mustard, Worcestershire sauce, lemon juice, parsley, and seasonings. Be careful not to break the crab chunks too much—you want a chunky, hearty texture.
- Step 2: Taste and Adjust

- Taste the mixture and adjust salt, pepper, or spice levels. This is where you can add cayenne for heat or cheese for a richer flavor profile.
- Step 3: Prepare Egg Roll Wrappers
- Lay one egg roll wrapper on a clean surface in a diamond shape. Brush edges lightly with beaten egg to help seal later.
- Step 4: Fill the Wrappers
- Place about 2–3 tablespoons of crab filling in the center of each wrapper. Avoid overfilling to prevent tearing during frying.
- Step 5: Roll Tightly
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with egg wash.
- Step 6: Heat Oil
- Heat vegetable oil in a deep pan to 350°F (175°C). Make sure the oil is hot enough to crisp the rolls but not burn them.
- Step 7: Fry Until Golden
- Fry the egg rolls in batches for 3–5 minutes or until golden brown and crispy. Turn occasionally for even cooking.
- Step 8: Drain Excess Oil
- Remove egg rolls and place them on paper towels to drain excess oil.
- Step 9: Serve Hot

- Serve immediately while crispy, paired with your favorite dipping sauce.
Notes
Don’t overmix crab meat—keep chunks intact for better texture.
Always preheat oil to avoid soggy egg rolls.
Seal edges properly to prevent oil leakage while frying.
Use panko breadcrumbs for extra crispiness.
For faster prep, make the filling a day ahead and refrigerate.
If baking, lightly brush rolls with oil for a golden finish.
