Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans, lining the bottoms with parchment paper.
In a large bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract.
Beat the mixture on medium speed for about 2 minutes until the batter is smooth and well-combined.
Divide the batter evenly between the two prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Prepare the frosting by beating 1 cup of butter until creamy, then gradually adding the powdered sugar and heavy cream until fluffy.
Keep one cake round whole for the bunny’s face. From the second cake, cut two identical shapes to serve as ears and a small bow-tie shape from the remaining scrap.
Arrange the face on your serving platter, place the ears at the top, and position the bowtie at the bottom.
Frost the entire surface evenly, then sprinkle generously with the shredded coconut to create a fluffy texture.
Use jelly beans or chocolate candies to create eyes, a nose, and whiskers on the face.
