Ingredients

  • 1 lb lean ground beef 90/10
  • 1 tbsp olive oil
  • 1 medium yellow onion diced
  • 1 bell pepper any color, diced
  • 3 cloves garlic minced
  • 2 tbsp taco seasoning or 1 packet
  • 1 15-oz can kidney beans, drained and rinsed
  • 1 15-oz can black beans, drained and rinsed
  • 1 15-oz can corn, drained (or 1 1/2 cups frozen)
  • 2 14.5-oz cans diced tomatoes with green chiles, undrained
  • 3 cups low-sodium beef broth
  • Juice of 1/2 lime
  • 1/3 cup chopped fresh cilantro
  • Salt and black pepper to taste

Method

  1. Brown the beef: heat oil in a large Dutch oven over medium-high; cook beef 5-6 minutes, breaking into crumbles, until no pink remains. Spoon off excess fat.
  2. Soften the aromatics: add onion and bell pepper; cook 4-5 minutes. Stir in garlic and taco seasoning; cook 1 minute until fragrant.
  3. Add everything else: stir in beans, corn, tomatoes with juices, and broth. Bring to a boil.
  4. Simmer: reduce to low, cover, and simmer 20 minutes, stirring once or twice.
  5. Finish: stir in lime juice and cilantro. Adjust salt, pepper, or seasoning. Ladle into bowls; everyone loads up toppings.
