Method
- In a medium mixing bowl, combine shredded chicken, onions, garlic, cumin, paprika, chili powder, salt, pepper, cilantro, and cheese (if using). Mix thoroughly until well combined.
- Warm the tortillas:
- Heat tortillas one at a time in a dry skillet for 10–15 seconds per side. This makes them pliable and prevents cracking while rolling.
- Assemble the flautas:
- Place 2–3 tablespoons of filling on one end of each tortilla. Roll tightly to enclose the filling completely. Secure with a toothpick if needed.
- Heat the oil:
- Pour 1/4–1/2 inch of oil into a skillet and heat over medium-high. Test by dropping a small piece of tortilla into the oil; it should sizzle immediately.
- Fry the flautas:
- Carefully place flautas seam-side down into hot oil. Fry in batches, turning occasionally, until golden brown and crispy on all sides (about 2–3 minutes per side).
- Drain excess oil:
- Remove flautas with tongs and place on paper towels. Remove toothpicks if used.
- Serve immediately:
- Plate with shredded lettuce, salsa, guacamole, crema, and lime wedges for a classic Mexican presentation.
- Baking Option:
- Preheat oven to 400°F (200°C). Brush rolled flautas lightly with oil and bake on parchment-lined baking sheet for 15–20 minutes, turning halfway, until golden and crisp.
Notes
While indulgent, flautas can also be part of a balanced diet when made thoughtfully:
Chicken or lean meat: High in protein, supports muscle health.
Onions and garlic: Rich in antioxidants and immune-boosting compounds.
Corn tortillas: Gluten-free, lower in calories than flour tortillas, and a good source of fiber.
Cilantro: Contains vitamins A, C, and K, adding freshness and nutrition.
Optional baking: Reduces fat content, making flautas suitable for low-calorie or weight-conscious diets.
