Ingredients

  • Main Ingredients:
  • 1 cup unsalted butter softened at room temperature
  • 3 to 4 cups powdered sugar sifted
  • 2 –3 tablespoons heavy cream or whole milk
  • 1 teaspoon pure vanilla extract
  • 1 cup Fruity Pebbles cereal lightly crushed
  • Pinch of salt balances sweetness
  • Optional Add-ins:
  • 1 –2 tablespoons cream cheese for tangy flavor
  • ½ teaspoon almond extract for deeper flavor
  • Extra crushed cereal for topping and decoration
  • Variations:
  • Dairy-free butter and plant-based milk for vegan version
  • Coconut cream instead of heavy cream for tropical twist
  • Less powdered sugar for lighter frosting texture

Equipment

  • Mixing bowl (medium or large)
  • Electric hand mixer or stand mixer
  • Rubber spatula
  • Measuring cups and spoons
  • Fine sieve (for powdered sugar)
  • Food processor or zip bag + rolling pin (to crush cereal)
  • Offset spatula (for decorating cakes or cupcakes)
  • Alternatives:
  • If you don’t have an electric mixer, you can use a whisk, but it will take more time and effort to achieve a fluffy texture.

Method

  1. Step 1: Prepare the cereal
  2. Lightly crush the Fruity Pebbles using a food processor or by placing them in a zip bag and gently rolling with a rolling pin. You want small pieces, not powder.
  3. Step 2: Cream the butter
  4. In a large mixing bowl, beat the softened butter using a mixer for 2–3 minutes until it becomes light, fluffy, and pale in color. This step is key for smooth frosting.
  5. Step 3: Add powdered sugar
  6. Gradually add powdered sugar, 1 cup at a time. Mix on low speed first, then increase speed to avoid mess. Scrape the sides of the bowl as needed.
  7. Step 4: Add flavoring
  8. Pour in vanilla extract and a pinch of salt. This balances the sweetness and enhances the overall flavor.
  9. Step 5: Adjust consistency
  10. Add heavy cream or milk one tablespoon at a time until the frosting reaches a smooth, spreadable texture. If it feels too thick, add a little more liquid.
  11. Step 6: Fold in cereal
  12. Gently fold in the crushed Fruity Pebbles using a spatula. Don’t overmix—you want the cereal to stay slightly crunchy for texture.
  13. Step 7: Frost your dessert
  14. Use immediately on cupcakes, cakes, or cookies. For best results, frost cooled baked goods only to prevent melting.
