Method
- Prep the potatoes: Peel (optional) and dice potatoes into ½-inch cubes. Uniform size ensures even cooking.
- Parboil for crispiness (optional but recommended): Boil diced potatoes in salted water for 3–5 minutes. Drain and let them dry completely. This removes excess starch and helps achieve golden edges.
- Heat the skillet: Add olive oil to a large skillet and heat over medium-high heat until shimmering.
- Cook the onions and garlic: Add diced onions and sauté for 2–3 minutes until translucent. Stir in minced garlic and cook for another 30 seconds.
- Add the potatoes: Spread potatoes evenly in the skillet. Avoid overcrowding—crowded potatoes steam instead of crisp.
- Season: Sprinkle smoked paprika, salt, pepper, and optional herbs. Stir to coat evenly.
- Cook undisturbed: Let potatoes cook for 5–7 minutes without stirring to form a golden crust.
- Flip and stir occasionally: Continue cooking, turning the potatoes every 3–4 minutes until all sides are golden brown and crispy, about 15–20 minutes total.
- Check doneness: Test with a fork—potatoes should be tender inside and crispy outside. Adjust salt and seasonings to taste.
Notes
Dry potatoes thoroughly before adding to the skillet; excess water prevents crisping.
Don’t stir too often—let the potatoes form a crust before flipping.
Uniform cutting ensures even cooking and prevents burnt edges.
Parboiling is optional but highly recommended for that perfect golden outside with a tender inside.
Oil alternatives: For a richer flavor, use ghee or clarified butter. For low-calorie cooking, use cooking spray.
