Ingredients

  • 6-8 fresh mint leaves for muddling; plus one small sprig for garnish
  • 2 thin lime slices about 1/4 lime — one for the glass, one for garnish
  • 1 oz elderflower liqueur 30 ml — St-Germain, Fiorente, or similar
  • 3 oz dry Prosecco 90 ml — brut or extra-dry, well chilled
  • 2 oz soda water 60 ml — chilled club soda or sparkling mineral water
  • 1 cup ice cubes large cubes preferred

Method

  1. Slap 6-8 mint leaves once between your palms to release the oils, then drop them into a large wine glass.
  2. Add 1 thin lime slice and fill the glass to the top with ice.
  3. Pour 1 oz (30 ml) elderflower liqueur over the ice.
  4. Pour in 3 oz (90 ml) chilled Prosecco, tilting the glass and pouring slowly to preserve the bubbles.
  5. Top with 2 oz (60 ml) chilled soda water.
  6. Stir once, gently, with a bar spoon — just enough to combine.
  7. Garnish with a fresh mint sprig and the remaining lime slice. Serve immediately.

Notes

1. Slap, don't shred: one firm slap releases mint aroma without the bitterness that comes from over-muddling.
2. Keep everything ice-cold — chilled Prosecco, chilled soda, and a full glass of ice keep the drink crisp instead of flat.
3. For a non-alcoholic version, swap the liqueur for 1 oz elderflower syrup and the Prosecco for sparkling white grape juice + extra soda.
4. One 750 ml bottle of Prosecco makes about 8 Hugo Spritzes — plan one bottle per 8 guests for parties.
5. Pour sparkling ingredients last and stir only once; vigorous stirring kills the fizz.
