Method
- Prepare the greens: Rinse mustard greens thoroughly under cold water to remove dirt. Shake off excess water or spin in a salad spinner. Roughly chop the leaves and stems into bite-sized pieces.
- Heat the pan: Place your sauté pan over medium heat. Add olive oil and let it warm slightly.
- Sauté aromatics: Add mustard seeds and let them pop for 30 seconds. Then add chopped onions, garlic, and ginger. Cook until onions turn translucent and fragrant.
- Add spices: Sprinkle in turmeric, cumin, and red chili powder. Stir well to coat the aromatics.
- Cook the greens: Add mustard greens to the pan. Toss gently to combine with spices. Add 2 tablespoons of water or vegetable broth to help the leaves cook evenly. Cover and cook for 5–7 minutes, stirring occasionally.
- Season and finish: Add salt to taste and a squeeze of fresh lemon juice for brightness. Cook uncovered for another 2–3 minutes if you prefer your greens slightly crispy, or longer if you like them soft.
Notes
Prep ahead: Wash and chop greens in advance to save time. Store in a sealed container in the fridge.
Don’t overcrowd the pan: Greens release water; giving them space ensures even cooking.
Balance flavors: A splash of lemon juice or a dash of soy sauce can enhance flavor without added calories.
Substitutions: Spinach, collard greens, or kale can be used if mustard greens aren’t available.
