Total Time 45 minutes
Servings: 12 eggs

Ingredients

  • 1 cup creamy peanut butter room temperature
  • 1/4 cup unsalted butter softened
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar sifted
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon coconut oil to ensure a glossy finish

Method

  1. In a large mixing bowl, beat the creamy peanut butter, softened butter, and vanilla extract together until the mixture is light and uniform.
  2. Gradually add the sifted powdered sugar in three batches, mixing on low speed until a thick, dough-like consistency forms.
  3. Take about two tablespoons of the mixture at a time and roll it into a ball, then flatten it slightly to form an egg shape.
  4. Place the shaped centers onto the parchment-lined baking sheet and freeze for 20 minutes to firm them up, which makes dipping much easier.
  5. Combine the chocolate chips and coconut oil in a microwave-safe bowl and heat in 30-second intervals, stirring thoroughly between each, until completely smooth.
  6. Use a fork to gently lower one chilled center into the melted chocolate, turning it to coat all sides evenly.
  7. Tap the fork on the edge of the bowl to remove excess chocolate, then slide the coated treat back onto the parchment paper.
  8. Allow the chocolate to set completely at room temperature or in the refrigerator for about 15 minutes before serving.
