Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy almond butter or peanut butter
  • 1/3 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1/4 cup mini dark chocolate chips

Equipment

  • Large mixing bowl
  • Silicone spatula or wooden spoon
  • Measuring cups and spoons
  • Cookie scoop (optional, for uniform sizing)
  • Baking sheet lined with parchment paper

Method

  1. In a large mixing bowl, combine the rolled oats, almond butter, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Use a sturdy spatula to stir the mixture thoroughly until all dry ingredients are completely moistened and a uniform dough forms.
  3. Fold in the mini dark chocolate chips, ensuring they are evenly distributed throughout the mixture.
  4. Place the bowl in the refrigerator for 20 minutes to allow the oats to absorb the moisture, which makes the dough easier to roll.
  5. Once chilled, scoop about one tablespoon of dough at a time and roll it between your palms to form a smooth ball.
  6. Arrange the finished pieces on a parchment-lined baking sheet and return them to the refrigerator for another 10 minutes to set firmly before serving.
