Method
- Soak the Noodles
- Place rice noodles in a large bowl. Cover with hot (not boiling) water. Soak for 8–12 minutes until pliable but slightly firm. Drain well.
- They should feel flexible but not mushy.
- Prepare the Sauce
- Whisk soy sauce, oyster sauce, sesame oil, brown sugar, rice vinegar, and chili flakes. Set aside.
- Heat the Wok
- Heat oil over medium-high heat until shimmering. Proper heat ensures stir-fry flavor and prevents sogginess.
- Cook Aromatics
- Add garlic and ginger. Stir for 30 seconds until fragrant but not browned.
- Add Vegetables
- Toss in bell peppers, carrots, and cabbage. Stir-fry for 2–3 minutes. Vegetables should remain slightly crisp.
- Add Protein
- Add cooked chicken, shrimp, tofu, or beef. Toss to heat through.
- Combine Everything
- Add drained noodles and pour sauce over. Using tongs, toss continuously for 2–3 minutes until noodles absorb sauce and become glossy.
- Finish & Serve
- Remove from heat. Garnish with green onions, cilantro, and a squeeze of lime.
- Serve immediately while steaming hot.
Notes
Do not over-soak noodles; they continue cooking in the pan.
Always cook on medium-high heat.
Toss instead of stirring aggressively to prevent breaking noodles.
Add sauce gradually if unsure — you can always add more.
Use a large pan to prevent overcrowding.
Common Mistakes to Avoid
Overcooking noodles (causes stickiness)
Adding too much sauce at once
Cooking on low heat (leads to soggy texture)
Skipping acid (lime or vinegar balances flavor)
