  • 1 teaspoon turmeric powder
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika optional, for deeper color and smoky flavor
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Lemon wedges for serving

Equipment

  • Large mixing bowl for marination
  • Measuring spoons and cups
  • Knife and cutting board
  • Baking tray or grill pan
  • Aluminum foil (optional, for easy cleanup)
  • Oven or outdoor grill
  • Basting brush for oil (optional)
  • Meat thermometer (to ensure perfectly cooked chicken)

Method

  1. Prepare the chicken: Rinse the chicken and pat it dry with paper towels. Make shallow cuts on the thickest parts for better marinade absorption.
  2. Make the marinade: In a large bowl, combine yogurt, lemon juice, garlic paste, ginger paste, vegetable oil, red chili powder, turmeric, garam masala, cumin, coriander, smoked paprika, and salt. Mix until smooth.
  3. Marinate the chicken: Rub the marinade generously over the chicken, making sure it gets into the cuts. Cover and refrigerate for at least 4–6 hours, preferably overnight for maximum flavor.
  4. Preheat oven or grill: Preheat your oven to 200°C (400°F) or prepare your grill for medium-high heat.
  5. Cook the chicken:
  6. Oven method: Place chicken on a foil-lined tray and bake for 25–30 minutes. Flip halfway and baste with remaining marinade. Finish under the broiler for 5–7 minutes for charred edges.
  7. Grill method: Place chicken on the grill, cook for 20–25 minutes per side until the internal temperature reaches 75°C (165°F). Baste occasionally with oil for extra juiciness.
  8. Rest and serve: Let the chicken rest for 5 minutes before slicing. Garnish with cilantro leaves and lemon wedges.
  9. Pro Tip: For an extra smoky flavor at home, place a small piece of charcoal in a heatproof bowl, heat until glowing, and pour a teaspoon of ghee over it. Immediately cover the chicken with a lid for 2–3 minutes to infuse that signature tandoori aroma.

Notes

Marinate longer: Overnight marination ensures tender, flavorful chicken.
Don’t overcrowd the grill/oven: Allow space for heat circulation, so the chicken cooks evenly.
Check internal temperature: Avoid dry chicken by using a meat thermometer; 75°C (165°F) is ideal.
Substitute yogurt: Coconut or almond yogurt works for dairy-free diets.
Adjust spice levels: Start mild; you can always add more chili powder before cooking.
